Juice concentrate is fruit juice from which water is extracted. It is as simple as that. it is made from fresh fruit and the concentrated juice product is then re-constituted with the same amount of water once it reaches the location of the juice manufacturer. Also, contrary to the popular assumption, the fruit juice from the concentrate is as fresh as the fruit juice!

Fruit juice may contain up to 90% water (depending on the fruit). When most of this water is removed/extracted, it results into a thick/ Viscous product is called juice concentrate. Extracting the water reduces microbiological growth (so it doesn’t spoil as easily as fruit juice), and cuts packaging, storage, and transportation cost. This also helps manufacturers to supply the juice to the consumers at a comfortable price.

When the amount of water exactly evaporated, is added back without adding any sugar, the juice returns to its 100% original form. About 85% of water content is evaporated from the juice to form a concentrate. Later, at the manufacturing facility, this water is added back to the 15% fruit juice concentrate, which is equivalent to 100% fruit juice! *(Apple juice concentrate 14% + Lemon juice concentrate 1%+ water ≈ equivalent to 100% fruit juice (reconstituted))
